In a large bowl, mix together:

- 1/2 cup olive oil

- 1/4 cup soy sauce

- 3 cloves minced garlic

- 2 tbsp minced ginger, or 1 tbsp ginger powder

- 1/4 cup Worcestershire sauce

- Juice of 2 limes

- Pepper to taste

Add your beef, cover and marinate in the fridge for at least one hour, up to 7.

STEP 2: Mix your Chimichurri

Grab your blender or food processor and blend together:

- 1 cup fresh parsley

- 1 cup fresh cilantro

- 1/4 cup olive oil

- 1/2 of a medium red onion, diced

- 3 cloves garlic

- Juice of 1 lime

- 2 tbsp red wine vinegar

Optional - 1/4 tsp red pepper flakes for a little heat!

Blend until smooth, but not pureed. There should be some chunks to your sauce. After blending, place in fridge to refrigerate while you grill the flank steak.

STEP 3: Grill, Slice, Drizzle and Serve

Yep, its that simple! Heat your grill or heavy cast iron skillet to a high heat. Quickly sear your Flying M Flank Steak until charred forms on both sides, being careful not to overcook. Slice against the grain and drizzle with your fabulous chimichurri sauce. Serve with tortillas, over rice or on it's own. It's a crowd pleaser!
