Our Akaushi Short Ribs originate from the plate of the beef, just below the back ribs and posterior to the brisket. This gives us short 3-4" pieces of rib bone encased in juicy brisket-type beef, perfect for braising or slow cooking. 

Simply season and and simmer while you're out of the house, you'll come home to a hearty "stick to your ribs" meal, ready to be served. Our family enjoys braised short ribs over potatoes, pasta, polenta, or shredded on sandwiches.

Our Short Ribs come vacuum sealed in 2lb packages.

MMMMmmmm.... Yes please...

I braised the short ribs in the oven in a turkey bag to keep them more moist and collect the tallow as well. The only seasoning was salt and pepper with a half of a Modelo for moisture. Slow roasted in the oven at 250 for about 4 hours until the bones would slide out on their own. I then collected the tallow from the bag and used about half of a cup in a skillet to sauté a package of sliced portabellas. After browning for a bit I added and browned the flour. Poured in the beef stock and made the most delicious and rich portabella brown gravy. Threw some toast under the broiler for 2 minutes, sliced the riblets to go on top of the toast, and covered all in portabella gravy. The special lady friend was awfully surprised to have a $50 plate of "Shit on a shingle." Was a perfect pairing with the creamy scalloped potatoes! Enjoyed immensely!
