A ribeye comes from the 6th-12th ribs of the animal. Let me introduce you to the 5th rib, the Chuck Eye.

Only two per animal, these cuts are highly prized yet relatively economical versions of the ribeye. We dare you to taste the difference, because we sure can't!

Hand cut into 1" thick and vacuum sealed, our chuck eyes average .8 -1.2 lbs each.

Perfection!

When a round eye steak comes from the Akaushi cow it is as tender and marbled as any ribeye steak. The first meal we grilled up the steaks and had the deliciousness with a baked potato. I cut the leftover steak into cubes and put them in a Ziplock bag in the fridge with teriyaki sauce, fat cap and all. The next night I made up some fried rice noodles to go with delicious, stir-fried teriyaki steak bites. It might have been better the second time around! 😊

Oh my dear sweet lord!

What is normally a tougher and cheaper cut of beef. When it comes from an Akaushi cow it is as tender and juicy as a ribeye steak. I sauteed some Jalapenos, Onion, and Garlic in salted butter in a skillet and then fried up the steaks in the compound butter. Topped the steak and mashed potato's in the sauteed veggies and proceeded to go fat kid. You can't go wrong with any of their beef! Wow is enough of a descriptor word.
