Best Carne Guisada Ever!

I took this beautiful piece of meat and cut it into cubes that I seared in a half stick of butter in a hot skillet. After browning, I removed the meat and added to the skillet a whole chopped sweet onion, 2 cloves of minced garlic and fried them in the butter until caramelized. Added the meat back and stirred, added a pound of potatoes, a pound of baby carrots, and a can of Rotel tomatoes. The sauce, mixed cold 2 cups beef stock, 2 tablespoons of flour, teaspoon of salt, pepper, smoked paprika, cumin, and a dash of chili powder. Once whisked added to the skillet and turned to low to simmer, stirring occasionally. After 3 hours I had a perfectly seasoned fall apart meat and veggies in a beautiful Guisada sauce. Serve with your favorite tortillas, I chose buttered. 😋
